Cooking with Cattail Pollen

We spotted quite a few cattails with pollen on the tops. We set out to gather a few up a week later or so, when there weren't as many that still had pollen. After separating out the pollen, we used it as a coating for some chicken. Made for quite a good meal. Similar in taste to wheat flour coated chicken, but a little stronger taste and slightly more bitter.
