Dude... I'm just saying that for an experimental beef synch roast, that center cut of meat is near raw. I realize it's a matter of preference and like medium, myself. No to the bbq sauce, though I won't say no to a few drops of lemon. And I will concede the best steak I had in my life was the ribeye on the bone at YO Steakhouse in Dallas. Salt, pepper and nothing else. Medium. You could cut it with a butter knife.
